I have never seen it spelled ghi either. if you used hirigana that would look strange and hard to say. It would look like this ぎひ (gihi) I would would just say gi or dogi I think its like Jujutsu, jujitsu, and Juijitsu. Jui jitsu used to be the way they spelled it way back in the day like 1800's. In my Genki book they romaji teacher like this "sensee" instead of sensei. I guess its an evolving thing.

I thought it came from keikogi, an coverall word for the clothing worn whilst practicing Budo. I would use Gi if using the short form. Hope that is of some help.
